Preparation Instructions

For Fish:

You can previously season the fish with coarse salt and set aside (optionally about 30 min).

Place the fish well washed in a pan, cover with water and bring to the heat. Once boiling, season with salt and cook for about 10 min. Reserve. Also store the cooking broth.

Clean it from skins and pimples and cut it into fillets or small strips.

For Rice:

In a saucepan place a little oil, the chopped onion, the garlic, the ripe tomatoes cut into cubes and the pepper in brunesa (in small cubes), together with a bay leaf and the tomato pulp and after sauté mash everything.

Then add the rice and fry it a little.

Add saffron (optional), pepper and piripiri (optional) and cool with white wine.

When the rice is almost cooked add the fish already cooked and even at the end add the coriander mixing everything very well.

Rectify the seasonings and serve immediately.
