Preparation Instructions

Remove the skin and bones from the cod and hake and season them with salt and pepper.

Peel the shrimp and cook the heads and shells together with the fish in a pan with 500 ml of water. Reserve the broth and the fish.

In another pan, place the oil, the chopped onion, the garlic, the skinless and seedless tomatoes and 50 ml of the fish cooking broth. Cover and simmer for 12 min. Then grind everything very well.

Add the curry, the cayenne pepper (optional), plus 50 ml of the broth and the fish.

Bring to a boil and add the coconut milk (use the thicker part), the squeezed lime juice, the shrimp kernels and the clams.

With the heat to the maximum, cook another 2 min until it thickens.

Turn off and sprinkle with chopped coriander.

Tip: you can also use grouper, monkfish or croaker for hake.
