Zoodles, or on the other hand, spiralized courgette, are an excellent alternative to pasta. Not only because they have much less hydrates, but also because they are much more nutritionally interesting.

Preparation Instructions


With the help of a cutter or spiralizer cut the spaghetti-shaped courgettes and set aside.


Peel 12 prawns and season with the juice squeezed from the lime (or lemon), salt and pepper.


Fry the prawns in olive oil with the chopped garlic. Reserve the prawns and the frying liquid.


In another pan with olive oil, add the onion cut in half thin moons, the carrot cut in half thin slices, the laminated mushrooms and the 10 cherry tomatoes.


Cook, over medium heat, for 4 min, then add the mushrooms and ½ sprig of chopped coriander.


Cook for another 4 min. Remove excess liquid. Add the prawns and turn off the stove.


In the frying pan where you fried the prawns, put the courgettes and wrap them in the sauce. Cook for 1 min and ½.


Then pour the contents of the other pan onto the courgette and wrap well. Rectify seasonings.


Sprinkle with thyme (or oregano) and serve immediately.

Tip: do not let the spiralized courgette cook too much, otherwise you will have something more like puree than spaghetti. Just sauté in the skillet just long enough to get hot and serve soon.

Suggestion: serve this recipe with some bacon or ham of good quality, as it will give an extra fantastic flavor!
