Preparation Instructions

Peel the avocados and drizzle with the half lime juice.

In a processor combine the avocados, half the chives and the plain yogurt. Beat everything well until cream.

Soak the gelatin leaves in cold water to soften. Then drain them and place them in a small bowl with half lime juice. Microwave for 15 to 30 sec to dissolve in juice without boiling.

Let it cool for a few minutes and then add the gelatin to the avocado cream wrapping.

Place the mousse in silicone cups or glass cups and refrigerate for 3/4 hours.

Before serving, peel the papaya, cut into cubes and drizzle with half lime juice. Chop the remaining chives.

Unmold or serve in the cups by covering the mousse with some cocktail sauce, the papaya cubes and the chopped chives.
