Preparation Instructions

Wash the sweet potato well and cut it into slices with the help of a mandolina or a very sharp knife.

Arrange the slices on a baking tray lined with parchment paper and bake for 25 min. Remove the tray.

Sprinkle with tomato paste and place the cherry tomatoes cut in half moons.

Return to the oven for about 15 min at 180ºC.

Sprinkle with chopped basil leaves. You can optionally add some arugula leaves. It is ready to serve.

Note: this recipe makes 20-24 mini pizzas. An individual serving is equivalent to 5-6 mini pizzas.
