Preparation Instructions


Preheat the oven to 200ºC.


Heat the butter and water in a pan and season with salt, pepper and nutmeg (optional).


As soon as it starts to boil, remove from heat and add the cold milk.


Add the contents of a sachet of puree at once and let stand for 1 min.


Add the juice of half a squeezed lemon and 3 egg yolks and mix well until you get a creamy puree.


To make the sauce, mix in a bowl a little olive oil with the juice of half a lemon, the dill, the chopped garlic, the chopped chilli without the seeds (optional) and a slice of grated ginger. Season with salt and pepper and put aside.


Cut the salmon into thin slices lengthwise.


Spread half of the puree on a platter, cover with the salmon slices and then with the sauce.


Finish with the remaining puree and brush with another egg yolk.


Bake for about 30 min or until golden brown. It is ready to serve.
