Preparation Instructions


Cut the eggplant in half, remove the inside and set aside.


Chop the onion and sauté with olive oil.


Add the minced meat to the eggplant inside and let it color.


Then season with salt and pepper and add the chopped tomatoes.


Fill the aubergine, sprinkle with grated cheese to taste and bake at 180º, about 40 min.


In the meantime bake the skinless sweet potato. When cooked, crush it with the help of a food processor or fork. Add a little salt and pepper and serve with the eggplant.
