Place the tapioca in the skillet (no greasing) and spoon over the bottom of the skillet.
In half the skillet put the cheese, the halved cherry tomatoes, drizzle with a drizzle of olive oil and season with salt and dried oregano.
Put on the plate and it's ready to serve!
Note: this recipe makes 4 crepes. An individual serving equals 1 crepe.
