Note: use 1/4 of the amounts to make 1 crepe

Place the tapioca in the skillet (no greasing) and spoon over the bottom of the skillet.

In half the skillet put the cheese, the halved cherry tomatoes, drizzle with a drizzle of olive oil and season with salt and dried oregano.

Keep on medium heat for 4 min, and when the cheese begins to melt use a spatula to fold the other half of the tapioca, without filling, so that it is “closed”. You don't have to turn it over at any time.

Put on the plate and it's ready to serve!

Note: this recipe makes 4 crepes. An individual serving equals 1 crepe.
