Preparation Instructions


Preheat a nonstick skillet.


Put the oil or olive oil and add the chopped onion and garlic and let it brown. Add the cumin and release the aroma, then the chopped tomatoes and peppers. Cover with a lid and cook for 5 min over low heat.


Remove the lid and break one egg at a time by placing it on top of the mixture, re-cover with the lid and wait 3 min or until the eggs have a white film on top (but raw inside).


Add the chopped coriander and serve with freshly ground pepper.
