Finely chop the onion and parsley. Cut half of the mushrooms in four and the other half in thick blades.
Bring a pan to the heat with half the olive oil and add the chopped onion. Let it simmer very gently for about 10-15 min. Add the mushrooms and the remaining olive oil. Season with salt, black pepper and paprika, add white wine and stir well. Let it stew for about 5 min.
