Preparation Instructions

For Quinoa:

Wash quinoa thoroughly with cold water. Scrub by hand and leave for at least 2 min under running water. Drain.

Let it dry a little and put in a pan. Add 1 tbsp olive oil and heat over medium-high heat. Put the quinoa and cook, stirring constantly, for about 1 min, letting the water evaporate.

Add water twice the amount of quinoa, bring to a boil and add a pinch of salt. Reduce heat and cook covered for 15 min without stirring. Turn off the heat, drain the quinoa, and leave the quinoa in the covered pan for another 5 min. After this wait, stir with a fork to loosen the quinoa before serving it.

For Quinoa Salad:

Cut the tomatoes and peppers into pieces. Grate also 1 carrot.

In a non-stick frying pan, pour 2 tablespoons olive oil and a little water and add the vegetables. Season with salt and pepper to taste.

Mix the mozzarella cheese and quinoa, and stir the salad. You can add more mozzarella if you prefer.

Accompany with lettuce leaves and it is ready to serve.
