In a large frying pan, place the seeds and pine nuts and let it brown over a medium heat, stirring occasionally. Remove and set aside.

In the same frying pan, add the sugar and water and, over medium heat, stir until bubbling.

Cut the oranges into slices and add them in the frying pan and let it caramelize for about 1 min on each side.

Reserve the orange slices and pour the remaining caramel in a jar.

In that jar, add the squeezed lime juice, the finely chopped garlic, olive oil and a pinch of pepper and salt. Close tightly and shake until well emulsified.

Place the washed and dried green leaves and the caramelized orange slices on a platter. Pour the sauce on top and sprinkle with the dried fruit.
