Cut an onion into coarse pieces and place in a food processor. Add the remaining ingredients (chickpeas, garlic, coriander, oatmeal, baking soda, salt and pepper) and pulse until you get a textured blend (attention, we want a texture where you can distinguish the ingredients).

Form small flat hamburgers with the mixture and refrigerate for 5 or 10 minutes to settle.

Heat a nonstick skillet, pour olive oil or coconut oil and cook the falafels about 5 min on each side over low heat until golden.

Serve with a salad of lettuce, tomato and red onion seasoned to taste.
